    Cutting Instructions for hogs are due the Friday of the same week the hog is being butchered.  


    (Please note that the 3 digit codes in parentheses are for internal use only).

    • A half hog will yield an average of 10 to 15# of trim assuming you are getting all the cuts possible (chops, roasts, pork steak). 
    • You may choose up to 2 products to be made out of your pork trim. We will divide them equally unless you specify different proportions in the comment section at the end.
    • If you would like a flavored brat, check the flavored brat box and specify which flavor in the Special Instructions area. Also note that each flavor counts as one item.  For a list of brat flavors, visit our website at https://schmidtsmeatmarket.com/products
